Is there some way (within EAC) of inverting polarity? Perhaps via an EAC plug-in?

Why would you want to invert the polarity? It is virtually impossible to hear the difference.

This is a job for an audio editor.

Well, there is EAC's wave editor:

Tools > Process Wave

Found under "Process Selection" is "Invert"
