www.mailwasher.net is what I use.  Downloads text and headers, and allows you to bounce spam and blacklist addresses.  Great freeware program!

Has a more advanced pay version, but the free one kicks ass as it is.

I'd like to mention, that both Mozilla and Thunderbird have 'learning' spam protection.
Quite efficient if you receive lot of spam.
(I do not, but some people I know and are using Mozilla do and are satisfied)

/EDIT\ Of course, POPFile might be more effective. I didn't try it, of course. \EDIT/

Afaik mozilla uses bayesian text classification too, so they should be pretty similar.
Vital papers will demonstrate their vitality by spontaneously moving from where you left them to where you can't find them.

popfile lets you classify/learn any type of email, not just spam. So that's a big plus. Having it automatically sort mailing list stuff, family stuff, business stuff, as well as spam, is just wicked. You can have it learn pretty much anything.

I use mailwasher too, but I don't recommend that you bounce the spam.

Spampal plus relevant (Bayesian, Weighted Regexp, URLBody, HTMLModify, UserLogInfo et cetera ) plugins.
Catches all my spam, and it's been ages since I've had a (digest) false positive.

After missing an email I was expecting, I went through my "junk" folder (where spam caught by mozilla is held for 2 weeks) and found about 1% false positives.

You can use SAProxy (Spam Assasin) to filter your mail from any program or use their mail client Bloomba for easy integration.

Bayesian filters are slow to adapt, and likely to make mistakes at first. Just unmark the not spam mails and the filter will learn more. Also remember that Mozilla can be set to never mark as spam known (in address book) emails (whitelisting). Also the regular filters are applied before the bayesian filter, so if an email is recognized and procesed, it can't go as Junk either.

For other programs, just look for "Bayesian Filters" on google if you don't use Mozilla. I know there are some for Outlook, and some for servers. On the client side, it eases the pain of manually deleting the spam. On the server side, saves the client to even download it.

SpamAssassin is my favourite spam filter by far, integrating many different anti-spam methods besides Bayesian filters, such as RBLs, Razor/Pyzor, regexp, auto-whitelist/blacklist, and more. It's designed to be used on the mail server or unix mail, but there is a mod (SA Proxy) which allows you to use it with any mail client on Win32.

I use POPfile myself, and I'm happy. But I don't use it just to get rid of spam, but to classify all my mail. The URL was mentioned above already a couple of times.
