Studios typically work with very high initial recording quality, yes. And yes, when you discard bits or samples/time, that conversion is lossy.

Of course, most of the quality of 24/96 (and above) is stuff that humans would be totally unable to distinguish, and basically gives the engineers a lot of room in which to play around before dithering the final product down to fewer bits and lower samplerate.

(Sorry, I was just worried that people would pop up asking "do I now need to go re-rip my whole collection in 24 bits and 96kHz samplerate?")
