I swear I didn't understand a word from what you were saying. 
Maybe you should take some English lessons.

Do you want to mux an XviD video track and a Vorbis audio track into a Matroska container or what?

I prefer HandBrake (http://handbrake.m0k.org/).
H.264 video and AAC audio, wrapped in a MP4 container.

Tool: DVDx (with proper crop and resize)
Video: XviD 2 pass
Audio: AC3
SubRip to rip subtitles
VirtualDubMod to split output AVI
SubEdit Player to split subtitles
Output: 2 AVI files for 2 CDs ;-)

I agree.  You've got some reading to do.  For ripping (as always) I use dvddecrypter.  Then again, I haven't run into any of those horrible disney or sony DVDs yet.
