Itunes 7 - disable auto download of cover art

I have just downloaded iTunes 7. When I add albums/songs to my library which do not have album art, iTunes automatically does 2 things. One is a process to optimize the gapless playback, and the other is that it downloads the missing cover art.

I always create my album art in a file called folder.jpg in the albums directory/folder and once the album is in iTunes I then use iArt's (a third party piece of software) hard disk feature to embed the album art into the mp3 tag before syncing to the iPod.

I have turned off the setting in preferences which says download album art, but it keeps doing it. How can I stop iTunes trying to find missing album art.

A second problem I am having is:
My album art on the iPod got corrupted so I turned the flag off to remove all album art and I have now turned it back on, but it is only updating the album art for albums loaded since the flag has been turned back on. How can I get the album art back on the iPod for all the songs already on there (which of course are still showing in iTunes), without resetting the thing and spending ages recopying the songs to the iPod
