flac to ipod-compatible format with album art?

So, I am among the many who are looking to finally not have to re-encode my collection again,again.  Thus I am looking to go lossless, and probably looking yowards flac as it seems the most widely available to get updated info about (though wavpack is also looking interesting).  However, before I start what will hopefully be my last BIG rip+encode,  I want to clarify some things.

1)  I plan to listen to the music in flac format, and I often like to listen to music in mass shuffle.  This being the case am I better off ripping seperate files for each track, or is it possible to do a mass shuffle using the cuesheet info for multiple whole-album-files.  (I am looking mostly to preserve the audio losslessly, and see little need to re-create the album for burning to disc, as I haven't listened to anything in CD format for quite some time).

2) I understand that the native tagging system for flac is text only.  I plan to put album art into the ripped folders which can be seen by most software players.  However, I also plan to transcode the flac into something lossy (probably aac for ipod use), and want to take advantage of the ipod's ability to show album art.  My understanding is that the ipod needs the album art embedded.  Is there an easy way to do the transcode with embed in batch.  Basically I would love to be able to line up many albums/songs, push a button, and walk away for awhile.  Come back and find lossy versions with the tags retained from the flac tags, and added album art.  IS this possible?

3)while I know that everyone here has a total hardon for foobar, I mostly use winamp as I like the vis plugins, and have grown fond of the Album list plugin (makes things nice and jukeboxy).  Any thoughts or considerations I should keep in mind for it's use?

4) given what I am looking to do, am I best off with flac or should I be looking for something else?  gapless playback for when I do listen to full albums is important, file size is less so.  Mostly I just want to do this once, and only re-transcode in the future.

foobar with iTunesEncode.exe is probably your best bet for doing the transcoding in batch. iTunesEncode can do album art, but as to exactly how to setup the encoder command line and foobar to do that, I really can't tell you. I don't use foobar extensively, however I do know that it's possible to do it with foobar.

I know for a fact that iTunesEncode can handle the album art.

Thanks Otto, that gives me a direction to go in.  I didn't realize itunes encode worked with anything besides EAC.
