Playback during conversion

I played some songs by mistake while I was converting audiobooks. (I forgot that I had been converting them.) Does this affect the conversion? Do these converted audiobooks have pieces of songs in the middle?

Nope, no problem at all. The converter and the player in foobar are independent from each other. You can even play a song and then convert that same file while playing, without further difficulties.

I don't think this should be under "3rd Party Plugins" though...

It depends what you have in your converter/output chain.
If you have for example yohngs vst wrapper in both chains, then your convertet files are destroyed when you start playback during conversion...

Which likely means you never touched it so no worries. Foobar can optionally add DSP (Digital Sound Processing) to the output of its converter via included and external components. One of its most useful features if you ask me. VST wrapper is just one of those components.
